If you can code (JavaScript for MV/MZ, Ruby for Ace), you can make pretty much anything you want. RPG Maker, the entry-level, do-it-yourself game engine, is arguably the star of the sale. Just keep in mind you'll be fighting the engine every step of the way, which will require a lot more work than the "intended" types of games. You can break the mold with stuff like Zelda-like action-RPGs or even 3D, which is possible through the use of plugins. RPG Maker excels at making a specific type of game: those resembling old school turn-based RPGs like Final Fantasy and Dragon Quest. It really depends on what you are trying to do - chances are, you bought or are considering RPG Maker because you want to make an RPG.
